Ingredients

    • 3 peaches in syrup
    • ½ can pineapple in syrup

    For anise custard:

    • 300 gr. sugar
    • 50 ml. water
    • 750 ml. milk
    • 2 eggs
    • 6 Egg yolks
    • 4 pieces of star anise

    For the spiced whipped cream:

    • 400 ml. cream 35% fat
    • star anise
    • 50 g sugar
    • cinnamon
    • vanilla
    • cardamom

Method

  1. Prepare a caramel with the 100 gr. of sugar and 50 ml. water and spread it over the bottom of flan molds.
  2. Beat the eggs and yolks with the sugar. Boil the milk with anise, remove from heat and add beaten eggs while stirring. Strain.
  3. Fill the flan molds and cook at 180 ° C in a bain marie. Put in the fridge.
  4. Boil the remaining sugar with the cream. When it starts to boil, remove. Cover and infuse for 5 minutes with spices. Strain and let cool.
  5. Cut the fruit into small cubes. Whip the cream and serve with the custard.
