Ingredients

    • 200 g of finely ground whole wheat flour
    • 1 tbsp of baking powder
    • 1 pinch sea salt
    • Lemon zest
    • 2  organic eggs
    • 70 ml of milk
    • 70 g brown sugar
    • 2 or 3 pieces of firm-fleshed fruit of your choice (eg pear, peach, apple, banana, etc)
    • Olive oil for frying

Method

  1. Mix the flour, baking powder, salt and lemon zest.
  2. Beat eggs and add milk and brown sugar. Mix both mixtures into a smooth batter. If it is too dense, add some more milk; if too thin, a little more flour. Let stand about 15 -20 minutes.
  3. Meanwhile, peel the fruit and cut into eighths, and the banana into thick slices.
  4. Heat the oil in a frying pan (without allowing it to smoke). Dip the fruit pieces in batter and fry immediately. Turn to brown on both sides and drain on absorbent paper.
  5. Serve immediately.
