Ingredients

    • A half liter of sheep's milk 
Rennet – available in supermarkets or pharmacies
    • 200g walnuts
    • 1lt milk
    • 100g sugar
    • 1 stick cinnamon

Method

  1. Boil the milk with a cinnamon stick and lemon and orange rind.
    Pour milk in the serving dishess and add the rennet curdling following the packet instructions.
  2. Let the milk stand for the time indicated on the packet.  Serve chilled.
  3. We can accompany the curd with a dash of honey or walnut sauce.
  4. For the sauce: gently simmer walnuts with a cinnamon stick in a liter of milk for 1 hour. Then add 100g of sugar and simmer for a further  5 minutes. Strain, let cool and serve.

Tip

Serve the curd with a walnut sauce.
