Ingredients

    • 1 kg. cherries
    • 1 vanilla pod
    • 100 gr. sugar
    • 300 ml. water

Method

  1. Use a cherry pitter or olive stoner to remove the stones from the cherries.
  2. You can also use a small kitchen knife.
  3. Put all the ingredients – the cherries, sugar, vanilla and water – in an earthenware casserole dish and simmer for 30 minutes until the cherries release their juices.
  4. Puree the the fruit, strain and allow to cool. Serve with seasonal fruit, fruit skewers or with any chocolate desserts.

Tip

You can sweat the cherries without water over a very low heat, giving you about 300 ml. of cherry juice with a very intense flavor and long shelf life.
