Ingredients

    • 500 gr Mascarpone Cheese
    • 250 gr cream
    • 4 tablespoons of icing sugar
    • 200 gr. cherries
    • 5 loquat
    • ½ lt. natural orange juice
    • ½ lt. water
    • 1 tablespoon of powder agar-agar (around 6 gr.)

Method

  1. Cut the cherries in half and remove the pips.
  2. Mix the Mascarpone with the icing sugar until it dissolves.
  3. Whip the cream and then fold in the Mascarpone.
  4. Fill the cherries with the whipped cream and Mascarpone. Set aside.
  5. Peel the loquats , remove the stone and blend with the orange juice.
  6. Bring half a liter of water to the boil then dissolve the agar-agar for 2 minutes, remove from the heat and stir in the mushrooms.
