Ingredients

    • 2 gluten-free cookies
    • 50 g of crushed hazelnuts
    • 1 tablespoon pine nuts
    • 1 tablespoon of molasses or rice syrup
    • 1 tablespoon grated coconut
    • 1 peach
    • 50 ml of fresh orange juice

Method

  1. Heat the oven to 160 º C.
  2. Cut the peach in half and remove the stone.
  3. Crumble the cookies into very small pieces, mixing them with hazelnuts, pine nuts and syrup. Cover the fruit halves with the mixture, sprinkle with grated coconut and place in a baking dish. Pour juice over and bake for 20 minutes, until top turns golden brown.
  4. Serve warm or cold with the cooking juice.
