Ingredients

    • 1 leg of Lamb
    • 2 onions
    • 1 green pepper
    • 1 red pepper
    • 1 tomato
    • 1 carrot
    • 1 sprig rosemary
    • 200 ml. white wine
    • Olive oil
    • Salt
    • 1 package filo pastry

Method

  1. In a saucepan - or better still, an earthenware casserole dish - sauté chopped onions and julienned  peppers with a drizzle of olive oi ,until they begin to brown. Then add the Lamb chunks and sauté with vegetables until the lam has browned
  2. Add the tomato, a sprig of rosemary and grated carrots,and  mix well. Then add the glass of white wine and let evaporate. Cover with water and simmer over a  low heat for 1h30 min. Add more liquid throughout cooking time as the stew dries out.
  3. Allow the stew from to dry once the meat is tender. Let cool.
  4. Cut filo pastry into rectangular shapes and put  a spoonful of stew at one end. Roll up in into a triangle and bake at 190 degrees for about 4-5 minutes until the pastry is golden-brown.

Tip

Serve with yogurt sauce.
