Raf tomato pipirrana

Ingredients

    • 1 kilo of raf tomatoes or a similar fleshy variety
    • A pink or red onion
    • 2 green peppers
    • 200g cooked navy beans
    • 1 clove garlic
    • 1 teaspoon ground cumin
    • 1 tablespoon chopped parsley
    • 8 teaspoons extra virgin olive oil

Method

  1. Cut the tomatoes into slices medium thin slices. Peel the onion and finely slice into feather shapes. Remove the stalk and seeds from the peppers and cut into thin strips.
  2. In a mortar, crush the garlic along with a teaspoon of salt, parsley, cumin, and add olive oil slowly. Assemble the dish by alternating the ingredients and season.
  3. You can decorate the dish with some fresh oregano leaves.

Tip

For an Andaluz twist, add a little hard-boiled egg.
