Homemade ketchup

Ingredients

    • 1 kilo of tomatoes
    • 1 onion, chopped
    • 1 clove garlic
    • 2 tablespoons olive oil
    • 4 tsp agave syrup
    • 3 tsp balsamic vinegar
    • ½ tsp paprika
    • Tabasco (optional)
    • 200g of tofu
    • Soy sauce

     

Method

  1. Blanch the tomatoes in boiling water for 10 seconds. Remove from the water and allow to cool. Once cooled, remove skins, discarding the seeds. Chop.
  2. Peel and chop the onion and garlic.
  3. Heat oil and sauté the onion and garlic very briefly.
  4. Add the syrup, vinegar, salt, paprika and tomatoes, stir and bring to the boil. Lower the heat and cook over a low heat, uncovered, for 45 minutes, stirring from time to time, until the sauce thickens.
  5. Cool completely, blend and season if necessary.
  6. You can add a few drops of tabasco (optional).
  7. Cover and refrigerate until ready to serve.
  8. Serve the ketchup with some "fake" chips. Cut the tofu into sticks and marinate for an hour with a half cup of soy sauce, stirring every so often. Then drain off the sauce and bake at 180 º C until golden brown. Turn from time to time so they are cooked uniformly.
