Ingredients

    • 2 clean monkfish fillets 300gr, each
    • 200gr bacon sliced very thin
    • A tray of cherry tomatoes
    • 1 zucchini
    • Herbs.

Method

  1. Cut the monkfish into small cubes or medallions, then wrap each medallion with a thin slice of bacon. Reserve.
  2. Put the medallions of monkfish and bacon onto skewers, alternating with cherry tomatoes, zucchini medallions and vegetables of your choice. 
  3. Roast the skewers on a charcoal grill for about 8-10 minutes until the monkfish is cooked through. Remove from the grill and serve.
  4. Serve with aromatic herb oil, olive sauce, mayonnaise or even a light barbecue sauce
