Couscous with pumpkin, cherry tomatoes and cheese

Ingredients

    • 300 gr. pumpkin
    • 250 gr. cherry tomatoes
    • 200 gr. couscous
    • 150 gr. goat cheese
    • Parsley
    • 2 tablespoons olive oil
    • 1 tablespoon balsamic vinegar

Method

  1. Dice the pumpkin, clean the cherry tomatoes, and put in the lower part of a steamer.
  2. Cover with a cotton cloth so that the grains of couscous don't fall throughAdd the couscous with some salt and close the steamer. Steam till the pumpkin is al dente.
  3. Once cooked, serve in a dish with goat cheese and chopped Parsley to taste.
  4. Season with olive oil, balsamic vinegar and salt to taste.
