 Tomato and crunchy breadcrumb stir-fry

Ingredients

    • 16 small round tomatoes
    • 1 sprig fresh basil
    • 1 sprig parsley
    • 3 sprigs fresh chives
    • 5 tablespoons dried wholegrain toast
    • 5 tablespoons dry goat cheese
    • 2 tablespoons chopped onion
    • Salt and black pepper
    • Olive oil

     

Method

  1. Add the toast, goat cheese, onion, and Herbs to a blender. Press the button and blend into crumb-sized pieces rather than powder.
  2. Heat two tablespoons of oil in a frying pan and add the crumbs. Stir for 8 minutes and then let cool.
  3. In the same frying pan, heat a few tablespoons of olive oil and sauté the whole tomatoes for 5-8 minutes until the skins begin to wrinkle.
  4. Add the crumbs, season and sauté another minute. Serve immediately with a little parsley.
