Sasha´s lemon heart biscuits made with loads of love

Ingredients

    •  125g butter or margerine de soya at room temperature
    •  100g caster sugar
    •  1 Egg
    •  250g plain flour
    •  Juice and zest of 2 Lemons
    •  ¼ teaspoon baking powder
    •  A pinch of sea salt
    •  Plain flour, for dusting

Method

  1. Beat the butter and sugar in a bowl with an electric mixer or by hand until creamy.
  2. Beat in the Egg until the mixture is light and fluffy.
  3. Add the flour, lemon, baking powder and salt and mix until you have a ball of dough.
  4. Cover and place in the fridge for 2 hours, or until firm.
  5. Preheat your oven to 180°C.
  6. Roll out the dough on a floured surface until ½cm thick.
  7. Cut out hearts and place on a greaseproofed tray.
  8. Bake for 10 to 12 minutes until the edges are light brown.
  9. Transfer to a wire rack to cool.
  10. Makes about 30 small hearts

Tip

You can use orange zest to change the taste
