Warm white asparagus with salmon and mayonnaise

    For the Sabayon Sauce:

    • 3 Egg yolks
    • 1 ½ dl. cream
    • 3 tablespoons mayonnaise
    • salt, pepper

Method

  1. Clean, peel and cook the Asparagus. Reserve. Youy also use quality canned white Asparagus.
  2. In a bain marie, prepare the Sabayon sauce: whisk the  Egg yolks and cream until a creamy.
  3. Remove from heat and add mayonnaise, salt and pepper and set aside.
  4. Wrap each Asparagus with a slice of salmon so that the tip of the Asparagus spear sticks out.
  5. Place the Asparagus on a platter or in a dish and cover with sauce.
  6. Bake au gratin in the oven.
  7. Serve immediately.
