Ingredients

    • 2 medium potatoes
    • 1 onion
    • 100g Spinach
    • 1 chili
    • 2 teaspoons ground cumin
    • Empanada dough

Method

  1. Cook the potatoes in boiling water and let cool.
  2. Once cold, peel and dice.
  3. In a frying pan, saute the finely chopped onion and add the cooked, diced potato.
  4. Add julienned Spinach, finely chopped chilli and the two teaspoons of cumin.
saute and allow to cool.
  5. Fill the dough with this mixture, seal well and fry in batches in hot oil, making sure they don't stick to the frying pan.
Drain on absorbent paper and serve immediately.

Tip

Traditionally, these are made with a chickpea or flour-based dough, salt and oil or clarified butter. But you can also use puff pastry.

    Empanada dough is good but even easier are medium size flour tortillas cut in 3 inch strips

    It says 2 tablespoons of cumin in the ingredients list but 2 teaspoons of cumin in the method, step 4. Which is correct, please?
