Potatoes stuffed with ratouille, ham and quail eggs

Potatoes stuffed with ratouille, ham and quail eggs

Ingredients

    • 4 potatoes
    • 4 Quail Eggs
    • 1 slice of ham
    • 1 green pepper
    • 1 tomato, peeled
    • 1 onion
    • ½ corgette (zucchini)
    • 1 clove of garlic
    • Olive oil
    • Salt

Method

  1. In a skillet sauté the onion, chopped pepper and garlic with the olive oil.  When it begins to brown add the peeled diced   tomato and grated corgette.  Season and leave to cook.
  2. Bake the potatoes with their skins on, in the oven or microwave until soft.  Cut them in half lengthwise and scoop out some of the center.
  3. Fry the Quail Eggs in very hot olive oil until the edges have browned slightly.
  4. Fill the potatoes with a spoonful of ratatouille, then cover with a strip of ham and place the quail Egg on top.
