Ingredients

    • 800 gr. foie (fresh Duck liver)
    • 250 ml. water
    • 200 gr. sugar
    • 75 ml. sweet wine, eg. Pedro Ximenez

Method

  1. With the help of a blender, blend the fresh Duck livers, adding the boiling water gradually, until a warm, liquid soup is formed. Season with salt and pepper and reserve.
  2. Meanwhile, prepare the syrup in a saucepan or frying pan by cooking the sweet wine with sugar. Once a caramel starts to form, remove from heat and let cool slightly. Pour the warm caramel mixture into the bottom of shot glasses.
  3. Add the foie infusion on top of the caramel mixture. Serve with some toasted bread cubes, a few drops of truffle oil, etc..

Tip

Use a broth of Boletus (wild mushrooms, ceps) instead of water for a deeper, richer flavor. You can serve chilled or warm. If serving chilled, add 100 ml. more liquid to the mixture and allow to cool.
