Razor clams

A juicy shellfish that’s easy and quick to prepare
Its flesh is highly prized and is eaten fresh, but you can also enjoy canned varieties.

This tasty mollusk lives on the seabed where they burrow holes 50 cm deep into the sand. Basically, it feeds on plankton and contains very little fat.

Characteristics.

The shell of this mollusk is elongated, brittle and striated, measuring between 7 and 20 cm long and has a color ranging from white to brown. There are several varieties:


- Grooved razor.
Orange and brown shell. It is found in the Mediterranean, Black Sea and Atlantic Ocean.

- Atlantic jacknife. Large and and found in the Atlantic.

- Razor shell.
From Norway and Portugal, it is 17 cm in length.

- Pacific razor clam.
This variety is only found in the Pacific.

- American  jackknife.
Very similar to the European variety.

- Dombey's tagelus. Can reach 20 cm in length and comes from the coasts of Chile and Argentina's Atlantic coast.

Season.

Fishing season is all year round.

How to buy.

They should be bought very fresh and are often bought while still alive.

In the kitchen ... 
 They can be cooked just like clams, boiled or grilled with a drizzle of olive oil and squeeze of lemon. Sand should be removed by rinsing thoroughly.

How to preserve.

Like most molluscks, they should be eaten as soon as possible as they quickly spoil. It is important to keep them in the refrigerator until ready to consume.

Did you know?

Do not confuse razor clams with the sword-razor shell, another mollusk with a similar appearance. Razor clams have a curve, while the sword-razor is straight. In addition, the latter has a thin diagonal seam separating the shell into two areas by color.

    Hola Najat, todo depender? del estado en el que las hayas adquirido y como las hayas conservado aunque 6 d?as nos parecen ya muchos d?as, m?s en estas fechas y quiz?s no ser?a del todo recomendable asumir ciertos riesgos!! menos con el marisco! ante la duda sobre el estado de las mismas..mejor no las consumas! un abrazo y animo! iker

    Hola .queria pregu si puedo consumir las nabajas seis dias despues de haberlas comprado .me preocupa mucho comer estos bichos .gracias
