Characteristics of thyme
Like mint, thyme (thymus), is a perennial herbaceous plant of the Labiatae family. The plant rarely grows to heights over 30 cm. and is found wild in dry rocky soil. The stems are woody, of a grayish color and the leaves grow in clusters, are very small and elongated, and are lighter and downy on the underside. This plant is very beautiful and intensely aromatic, and produces early spring flowers in shades of white, pink and violet.

History of Thyme
The distinctive aroma of thyme has a long history: it was used for embalming in ancient Egypt and is cited by the Greek physician and philosopher Galen for its medicinal properties. The Romans used it to perfume their baths and burned it to purify the air. They spread it throughout Byzantium and the West. There are medieval records of the medicinal, culinary and aromatic properties of thyme, with ladies giving it as an amulet to men before battle.

From the early eighteenth century it was used to obtain an essential oil that is used even today in the pharmaceutical industry (for its antibacterial properties), liquors and cosmetics. Today, in Spain thyme is grown chiefly in the regions of Andalusia, Castilla-La Mancha and Murcia.

Varieties of thyme
Thyme is one of the most widely used herbs in worldwide cuisine, and there are hundreds of varieties. Besides common thyme (thymus vulgaris), there are varieties with a citrus flavor, like lemon thyme (thymus citriodorus), ideal for dressing fish, varieties such as "Serpolet" (thymus serpyllum) and other aromatic types reminiscent of lavender and cumin, and some with fragrant, fruity flavors.

Properties of thyme
When steam distilled, thyme releases an essential oil that contains alcohols, the most important being thymol. Thyme is rich in iron and also contains other minerals such as calcium, cobalt and magnesium. It has vitamin B13, which aids blood flow to the brain. Thyme also has significant amounts of amino acids.

Medicinally, thyme is an antibacterial and expectorant, so it is used to treat respiratory ailments. It is a diuretic and promotes liver secretion and the elimination of gases, so it aids digestion and prevents colic and other ailments. It also stimulates the appetite and repels insects.

Keeping thyme
To dry thyme, hang unwashed sprigs upside down in a dry and warm place, but away from direct sunlight. Near a stove is a good spot. Once dry, give a good shake. It is best to store them in sealed jars, the more airtight, the better.

Using thyme in the kitchen
Thyme is used to enhance the flavor of meats, fish and vegetables, soups and sauces.
