High in vitamin K which is important for bone health
They are native to the cooler higher climates of Central America but were bought over to the British Isle in the 17th Century as a decorative plant before being used as a food.
SEASON
Runner beans are also known as string beans. They are in season from June to November.
CHARACTERISTICS
The runner bean is a member of the legume family; the long pods are pale green in color with a rough texture. They are more distinct from green beans in several ways; they are normally larger with long flattened pods their skin is roughly textured, although in young beans this softens during cooking, they contain purple beans within the pod
They are high in vitamin k which is important for bone health, they have a diuretic effect which eliminates body toxins and lowers bad cholesterol due to high fiber content. They promote and prevent rise in blood sugar levels so are good for diabetics, and help prevent against cancer. They are rich in sources of vitamins A, C, K, manganese, potassium, dietary fiber, foliate, iron, protein, calcium, riboflavin, magnesium, copper, niacin and thiamine.
HOW TO BUY
Look for young beans with fresh green skins and firm textures; they should snap easily revealing a nice juicy pod. Store in the fridge and use within two days for a fresher tasting bean.
TO USE
Prepare the beans by top, tailing and stringing the beans, do this by slicing the knife into the top of the bean without cutting through it, if a thick thread comes away the bean needs to be stringed. They can then be sliced horizontally.
Steam, boil or add to soups and stews.
