Nowadays, you can find fresh carrots all year round, even if their natural season is spring.
Introduction
Carrots are native, in its wild, to southern Europe and the Mediterranean basin. Carrots are an excellent source of b-carotene, essential for good eye health. They're also rich in substances that regulate bowel function, and possess antioxidants that protect cellular activity and circulatory system.
Characteristics
The earliest and most tender varieties are harvested with their leaves still green and thesee can be found on the market in bunches. There are "mini" varieties that are an excellent garnish for meat and fish. The shape and color may vary from long and bright orange to the rounder ones with violet tones. All are highly recommended to maintain a balanced diet.
How to buy carrots
We find the more tender varieties in bunches. More mature carrots are available in trays or in bags and in bulk. You can also buy them frozen, cut into cubes, sticks or medallions.
Uses
Carrots are excellent to eat raw, thus allowing the active ingredients to work better. They're even better combined with virgin olive oil or nuts. Carrots make delicious cream soups and purees, and are a great way to wean a baby onto solid food. As a garnish, in salads, tempura, chips, etc
Storing carrots
Carrots keep well for up to 10 days in the refrigerator without suffering too much loss of nutritional properties.
