Asparagus is the young shoot of a plant from the Asparagaceae family. It is ideal in low-calorie diets and is rich in vitamins A, B and C, as well as minerals such as sulfur, potassium and phosphorus. The difference between white and green asparagus derives from their exposure to the sun. White asparagus is grown away from direct sunlight, typically in rows covered with black bags leading to their bleached appearance. Fresh asparagus are an excellent diuretic helping to alleviate fluid retention. Asparagus also prevents heart diseases and hypertension, and is a good remedy against cataracts.
