Clams are bivalve mollusks and, like other mollusks play a key role in the conservation of our seas, acting as a filter. For that reason they should never be consumed after a marine disaster or oil spill. The size and appearance of clams may vary but they are always a delicacy, whether simply dressed with lemon, in rice, creams, soups and salads. It is vital to eat only fresh clams to avoid severe food poisoning.
