Characteristics
Mango is the quintessential tropical fruit. Rich in fiber and vitamins, delicious, sweet and very juicy. There are many varieties available throughout the year.
Choosing a mango
Mangoes are very delicate, so the flesh should be firm but not excessively so. If too hard, allow a few days to ripen.
Conservation and storage
Keep in a cool place, preferably in the least cold part of the fridge. Will keep for several days, depending how ripe it was at the time of purchase. You can use overripe mangoes (when they are very soft) for sweet, creamy shakes.

Good for both sweet and savory recipes, side dishes for meat, poultry, fish, salads, vinaigrettes, desserts, cakes, mousses, creams, sauces, etc..
