Characteristics
You can choose from several options when it comes to chicken, including a poussin (or coquelet) that has been slaughtered young and weighs up to 1/2 kg, a roaster– that is, a spayed female weighing up to about 3 kg. or a capon, a neutered male weighing up to 3.5 kg. Chickens may be factory reared or free range. In the latter case, the meat is yellower and cooks faster.
Choosing a chicken
Your chicken should be very fresh, the meat should be clean and smooth and never have a slimy appearance. Eat as soon as possible, though you can keep it in the refrigerator a couple of days.
Uses
Chicken can be used in countless ways and in countless recipes. You can eat the skin but it is always better to cook till crunchy – and remember the skin contains more fat and cholesterol.
