Vegetable, miso and tapioca soup

Ingredients

    • 1 leek
    • 1 carrot
    • 300 gr. pumpkin or squash
    • 2 tablespoons extra virgin olive oil
    • 1 bay leaf
    • 1200 ml. water
    • 3 tablespoons finely ground tapioca
    • 3 tablespoons unpasteurized miso

  1. Wash and chop the leek, carrot and peeled squash.
  2. Heat oil in a saucepan and saute the vegetables for about 7 minutes over a medium heat, stirring every so often.
  3. Add the boiling water and bay leaf, and reduce the heat. Cover and simmer for about 15-18 minutes, until the vegetables are tender. Remove the bay leaf, sprinkle in the tapioca and cook for about 10 minutes, stirring to prevent lumps.
  4. Meanwhile dissolve the miso paste in half a glass of hot water (not boiling).
  5. Once the soup is ready, remove from the heat. Leave a couple of minutes with the saucepan uncovered, then add the dissolved miso. Mix well and serve immediately.
