Zucchini noodles with vegetables

Ingredients

    • 1 kg zucchini
    • Salt

    For the vegetables:

    • 450g. tomatoes;
    • 100g. shitake,
    • 70g. red pepper,
    • 60g  spring onions,
    • 90g. broccoli,
    • 15g. garlic;
    • 60ml. olive oil;
    • 10ml. tamari,
    • 1 pinch romero,
    • 1 pinch of thyme.

For the noodles:
  1. Peel the zucchini and cut them into noodle-length slices with a mandolin. Alternatively use a special kitchen implement for making spaghetti.
  2. Place the strips zucchini in a colander, season with salt and let stand about 30min. till they lose their rigidity.
For the vegetables:
  1. Separate the stems of mushrooms. Clean the heads, cut them into strips and marinate them for one hour in oil, tamari, garlic, rosemary and thyme.
  2. Peel and julienne the onion. Wash the red peppers, remove seeds. Julienne as well.
  3. Peel and remove the seeds from the tomatoes, and cut into strips.
  4. Break the broccoli  into florets.
  5. Mix all the vegetables along with the shitake and marinate half an hour.
  6. Presentation: Place noodles in the dish and add the vegetables.
