The term En Papillote is used to describe a dish that is cooked (and usually served) in a parcel of parchment paper, which is wrapped around the food in which you will cook, this protects it from the heat of the oven and retains its flavors and aromas. Tin foil, vine leaves, banana leaves, etc. can be used as well.
As the food is cooked in its own juice there is virtually no need to add fat, making it ideal for calorie restricted diets or if there are problems with digestion. With a little imagination you can come up with great ways to prepare fruit and vegetables with a fun and creative presentation. Healthy, fast food what more could you ask for!
In preparing a papillote take into account the types of food you are cooking for example tomatoes will cook quicker than pumpkin or onion, so it’s best to choose foods that need the same cooking time. Obviously fruit will take a shorter amount of time to cook than most vegetables. So depending on what goes in the oven, cooking will require between 8 – 30 minutes.
